Today’s adventure—Sweet Potato Basil Soup! With coconut milk!
Super easy to make.
Chop 2 sweet potatoes, 1/2 onion and 2 cloves garlic.
Add coconut milk, broth, basil, salt, pepper.
I accidentally bought the wrong kind of sweet potatoes, so the soup turned out white. But still tasted so good!
Next time I’ll probably add carrots and leeks to see how that affects the flavor. <3
Hen and I typically set aside Tuesday evenings from our busy weeks to pick up our CSA produce box and to prepare food for the week together.
This week we were also celebrating the return (Season 2) of Jamie Oliver’s Food Revolution TV series! If you are not familiar with the Jamie Oliver’s Food Revolution, here is Season 1 Episode 1 (of 6 episodes). This show means a lot to me, and I’m very glad that Henning values it as well.
In this scene from Tuesday, Jamie is showing a group of parents how much sugar is consumed by LAUSD (Los Angeles Unified School District) students via school meals each week. He is—as we all should be—seeking change.
Aside from cutting some fruit, steaming some veggies, cooking some pasta, and making some salads… Hen and I also made sweet potato fries (baked in the oven)! Burned quite a few, but lessons learned for next time. :)
For anyone interested in Community Supported Agriculture, it is an easy and convenient way to get locally and organically grown fruits and vegetables. LocalHarvest.org is a wonderful resource for finding farms in your area that drop off weekly boxes at either a central location or even YOUR HOUSE!
CSA’s are also great because they provide you with new produce that expands your recipe collection/cooking knowledge. :) AND you actually know where your food is coming from! I’m really hoping we as a society can latch back onto that concept.
